Removing Categories/services like Kitchen,Work etc

Hi,
I want to remove some of the categories ( WORK) and rename some of the services and add some services. How can I do this.
Can I delete or rename in "Categories of references"?
Also i do not understand "Display as column ( 1 column,2,3 column) under categories reference update section.

Kindly suggest.

Dashboard -> log in as administrator -> References
1) Categories of references
2) Values of references

i would suggest you to add a category of home remodeling, i think we need a category for that and then we can post any thing regarding home remodeling there. Thanks

Please explain your idea in details. It seems like you would like to add a new reference, right? Or you would like to offer home remodelling services?
